Description

Soft cake-like bars filled with mint Oreos and topped with even more Oreos.

Ingredients

  • FOR THE BAR:
  • ¾ cups Unsalted Butter
  • 1 cup Granulated Sugar
  • ½ cups Powdered Sugar
  • 2  Large Eggs
  • 1 teaspoon Vanilla Extract
  • 1-½ cup Cake Flour
  • 1 teaspoon Baking Powder
  • 1 pinch Salt
  • 10  Mint Oreos, Crushed
  • ¾ cups Mint Chips
  • FOR THE TOPPING:
  • 1 package (about 8 Oz. Package) Hersey's Cookies And Cream Drops (If You Can't Find Them, Use White Chocolate)
  • ¼ cups Heavy Cream
  • 1 Tablespoon Corn Syrup
  • 10  Mint Oreos, Crushed

Preparation

For the bars:
Preheat oven to 350ºF. Grease and lightly flour a 9-x-13-inch baking pan.

Using a stand mixer with the paddle attachment, cream butter and sugars together on medium-high speed. Add eggs and vanilla and beat well, scraping down the bowl after each egg addition.

Turn speed to low and add the dry ingredients and mix until incorporated. Add the crushed Oreos and mint chips and try and evenly distribute them best you can.

Bake for 35-40 minutes. Remove from the oven and cool on a wire rack. While cooling, prepare the topping.

For the topping:

Melt drops over a double boiler. When melted, add cream and corn syrup. Mix until smooth.

Spread over the bars. While the glaze is still wet, sprinkle the crushed cookies on top. Press down if you need to. Let the glaze firm up before serving.
