A crisp, chewy, chocolate-mint cookie made easy with a brownie mix. Incredibly good!
1. Preheat oven to 375F.
2. Whisk all ingredients together until combined.
3. Drop by cookie-scoopfuls onto a parchment-lined cookie sheet.
4. Bake about 12 minutes until a thin crackle-crust forms on the outside. If you’re unsure whether or not they’re done, use a toothpick, but don’t over-bake!
Makes about forty 3″ cookies.
Note: you can substitute the mint chips for pretty much any other baking chip, add nuts, whatever floats your boat. We just happen to love chocolate-mint flavor.
