All the goodness of cheesecake in small, manageable portions.
Preheat oven to 350F. Line muffin pan with cupcake liners and place one Nilla Wafer in the bottom of each one. Beat cream cheese and sugar until whipped. Add vanilla and beat in one egg at a time until all are mixed in well. Spoon batter into liners 2/3 full. Bake 20 minutes or until just slightly browned. Cool on rack.
Add fruit topping as desired.

I made these for my sister’s baby shower yesterday and they were fabulous, and soooo easy! Half of them I topped with strawberry glaze topping, and left the other half plain. They look wonderful when they are made, and I meant to take a picture and send it to you! Drat! Note to others making this: make sure you are not using extra large cupcake liners, cause the cookie won’t be big enough..hehe.. we had to go borrow some regular sized ones at the last minute!
