We made these all the time in my high school foods class. They’re so easy and they really are quite tasty. They’re perfect for potlucks because they’re individual cheesecakes!
Preheat oven to 350 degrees.
Blend cream cheese, sugar, eggs and vanilla. Place 1 vanilla wafer (you’ll need 24) in the bottom of a cupcake liner and place in a muffin tin. Fill the cup 2/3 full with the cream cheese mixture. Put in your oven and bake for 15 minutes. Remove from the oven and let cool. Before serving, top with the strawberry compote.
You can also top this with any pie filling you wish, or even try melted chocolate or caramel! So good!
