Description

Always afraid to try making Divinity, I was so happy when I found this recipe in my Sharp Microwave/Convection Oven Cookbook several years ago. It comes out perfect every time, but be sure to make on a sunny day as it won’t set up when the humidity is high.

Ingredients

  • 2 cups Sugar
  • ⅓ cups Water
  • ⅓ cups Light Corn Syrup
  • ¼ teaspoons Salt
  • 2 whole Large Egg Whites
  • 1 teaspoon Vanilla
  • Marshmallows
  • Candied Cherries Or Pecans

Preparation

1. Combine sugar, water, corn syrup and salt in a 2-quart casserole (I prefer a 2-qt batter bowl ). Cover. Microwave at high (100%) for 5 minutes. Stir well. Microwave, uncovered, at high (100%) until a hardball forms when a small amount is dropped in cold water, about 4 to 6 minutes. Cool for 3-4 minutes.

2. Beat egg whites until very stiff. Pour sugar mixture in a steady stream over the egg whites, beating constantly until the mixture holds its shape and starts to lose its gloss. While doing this, drop in a couple handful of marshmallows. Stir in vanilla.

3. When mixture is ready to be dropped onto waxed paper, place your bowl over a pan of hot water—not sitting in the pan, but over like a double-boiler. This will keep the mixture softer for dipping out.

We always add either a pecan or cannied cherry on top of each one.

I made this at night, the mixture was not quite stiff enough at first and I just kept stirring. It turned out beautifully!
