This is a traditional Colombian cake that I grew up with! Very different from other cakes: no icing, very moist and topped with sugar! It’s traditionally filled with blackberry jam, but you can substitute any other flavor.
Preheat oven to 350F. Grease and flour 2 round cake pans. Cream butter and sugar together. Add eggs one by one, mixing after adding each one. Mix in remaining ingredients. Divide batter evenly into cake pans. Bake for 25-35 minutes. Let cool. Cut the top off of one layer to make the top flat. Spread jam evenly on cut top and place other layer on top. Sprinkle top with granulated sugar.
