Description

These margarita donuts are so light and fluffy from being baked with all of the fun summer flavors of a margarita with lots of lime and tequila!

Ingredients

  • FOR THE DONUTS:
  • 1 cup All-purpose Flour
  • ½ cups Super Fine Sugar
  • 1 teaspoon Baking Powder
  • 1 Tablespoon Cocoa Powder
  • ½ teaspoons Cinnamon
  • 1 pinch Salt
  • 3 Tablespoons Milk
  • 2 Tablespoons Fresh Lime Juice
  • 1 teaspoon Fresh Lime Zest
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Tequila
  • 1 whole Egg
  • FOR THE GLAZE:
  • 1 cup Powdered Sugar
  • 2 whole Limes, Juiced
  • ¼ cups Water
  • Lime Infused Sea Salt, For Sprinkling On Top

Preparation

Preheat oven to 375ºF and spray a 6-well donut baking pan really well with cooking spray.

Whisk flour, sugar, baking powder, cocoa powder, cinnamon and salt together in a bowl. Set up a stand mixer with the paddle attachment and combine milk, lime juice, lime zest, olive oil, tequila and egg in its bowl. Beat thoroughly, then slowly pour in dry ingredients until you have a lovely batter. Transfer batter to a piping bag and evenly pipe into donut pan. Bake donuts for about 15 minutes, until puffy and golden around the edges. Take them out and let cool for half an hour.

While they cool, make the easy glaze. Simply stir powdered sugar, lime juice and water in a bowl. Dip each donut in glaze to submerge half of it, then put donuts on a plate glazed side up. Sprinkle with lime sea salt on top, then serve and enjoy! They also keep well for a day sealed up.
