Light and refreshing and will melt in your mouth!
Preheat oven to 350 F.
In a large bowl mix cake mix, eggs, oil and Mandarin oranges (with juice). Pour into a greased and floured 9 x 13 pan, or two 8″ round cake pans.
Bake at 350 F for about 30 – 45 minutes.
Combine Cool Whip, pudding mix, and crushed pineapple in a bowl. After cake is cool, frost with this mixture.

This is a delicious cake. It is the one I’ve made for my son’s birthday since he was 1 year old (he’s 27 now). Light and airy (using a yellow cake mix) and always a fave at the office. It can also be made with fresh strawberries. I’m glad you posted it!
