Jam filled cupcakes in pie crust.
This recipe used to say Flako pie crust mix, but now I use the ready-to-use kind.
Press out the pie crust and cut to fit into cupcake or muffin pans; insert into pans. Drop in a spoonful of jam. Make Jiffy cupcake batter and put two tablespoons of batter into each cup.
Bake for 20 to 25 minutes at 350 F. Remove from pan immediately.
You can frost these and put a half of a maraschino cherry on top for an authentic looking Maid of Honor. I make a powdered sugar glaze and spread a little on top.

A friend of mine makes these and they are absolutely delicious! One question though, do you use white cake mix or yellow cake mix?
