Description

I had an Italian grandmother who used to make lemon granita for us in the summer. It’s the perfect thing to cool you to your very core during hot summer days. It’s also less fattening than ice cream because it’s made with water instead of cream or milk.

And it’s sooo goood. It’s so easy too. It’s kind of unfair. I feel like maybe you should have to put more work in to deserve it, but hey. I don’t make the rules.

Ingredients

  • 1-½ cup Cold Water
  • 1 cup Granulated Sugar
  • 4 whole Large Lemons, Juice And Zest

Preparation

First off, put the water and sugar in a saucepan. Add the juice and zest from all the lemons. Make sure to strain the juice first so you don’t end up with loads of pips in your granita.

Bring the mixture to the boil, stirring continuously until the sugar is dissolved. Pour into a container and freeze. Every 20 minutes or so, stir the granita then put it back in the freezer. This makes it grainy and makes it easier to serve.

Before it freezes solid, and while it’s still slightly slushy, remove from the freezer and spoon it into glasses and serve with spoons.

If you want to keep it the freezer for a long time, just allow to melt for 10 minutes before serving so it becomes slushy again. It’s like a grown up Slush Puppie.

Tip: You can also make this with 2 lemons and 2 limes. It’s just as delicious.
