Description

Lemon Blueberry Blondies with White Chocolate Glaze, a refreshing summertime dessert.

Ingredients

  • FOR THE BLONDIES:
  • ¾ cups All-purpose Flour
  • ¼ teaspoons Baking Powder
  • ¼ teaspoons Salt
  • 1  Large Egg
  • 2  Egg Yolks
  • ¾ cups Sugar, Granulated
  • 6 Tablespoons Butter, Softened
  • ¼ cups Sour Cream
  • 1 Tablespoon Lemon Juice
  • 2 teaspoons Lemon Zest
  • ½ teaspoons Vanilla Extract
  • ¾ cups Fresh Or Frozen Blueberries
  • FOR THE GLAZE:
  • ½ cups White Chocolate Chips
  • 1-½ Tablespoon Milk Or Half-and-Half

Preparation

For the blondies:
Preheat oven to 350 F.

In a mixing bowl, whisk together flour, baking powder and salt.

In a large mixing bowl beat egg and egg yolks on medium speed until pale and fluffy. Add in sugar, butter, sour cream, lemon juice, lemon zest and vanilla and mix until well blended.

Add in dry ingredients and mix until just incorporated. Fold in blueberries and pour mixture into a buttered 8×8 baking dish and spread into an even layer.

Bake 30-35 minutes until a toothpick inserted in center comes out with a few moist crumbs attached. Allow them to cool completely.

While they are cooling, prepare the White Chocolate Glaze.

For the glaze:
Combine all of the glaze ingredients in a microwave safe bowl. Microwave for 1 minute checking and stirring after 30 seconds and continuing to heat until melted.

Pour the glaze over the top and spread evenly over brownies. Cut into squares. These are best completely cooled in the refrigerator. Enjoy!
