I always see lemon bars as a spring/summer treat, so by replacing the basic shortbread crust with a gingerbread crust I made them perfect for fall.
Ok, first thing you’re going to do is make the crust. Whisk together the flour, sugar, and spices. Cut in the butter and molasses til it looks like coarse bread crumbs then knead it a little to form a ball. Press dough into a lightly greased, 9×13″ baking pan and bake at 350 degrees (F) for 20 minutes. Remove from oven at this point and set aside.
Now for the filling. Mix together eggs, sugar, flour, and lemon juice until well blended. Pour over crust and bake for another 20-25 minutes, or until center is set.
Let cool and dust top with powdered sugar.
