Did not even last one shift at work. I made maple cream cheese frosting. Next time I am going decrease the sugar a bit in the cake, use the frosting and make 4 sections. One chopped toasted pecans, one shredded coconut, one mini chocolate chips and one with all three!

This is very tasty!!!! I will most definitely make again. Made this exactly as written. No optional add ins. Also, I feel there’s no need to add any sort of icing ormglaxe- perfect as is!

Very nice! I adjusted the amount of sugar and spices since I was working with oatmeal that was already sweetened with cinnamon and raisins. The kids enjoyed it, so it’s a hit, thanks!

I’ve made this twice and was very pleased both times. Best way to use leftover oatmeal of all that I’ve tried. I added 1/2 c. unsweetened coconut, 1 c. chopped dried apricots (our favourite) or dried cranberries and 1/2 c. chopped pecans. Moist and delicious! I will point out that mine took just over an hour to cook in my stoneware 13×9. Much longer than directed in the recipe, but now that I know that we will plan accordingly.

This is a great recipe that lends itself to much experimentation with flavors. I left out the cinnamon and vanilla and added 2 tablespoons of espresso powder and 1 1/2 teaspoons of hazelnut extract. It has a very aggressive coffee flavor but that’s just what I like. Great, moist cake that couldn’t be easier to make.
