Very light-textured and moist, good with or without frosting! Vary the flavor with your favorite jam.
Preheat the oven to 350 F.
Thoroughly cream shortening and sugar; add egg yolks and jam, beat well. Add sifted dry ingredients, alternating with buttermilk, beating well after each addition. Beat egg whites until stiff, then fold into the batter. Pour into a bundt cake pan or 3 round cake pans.
For a bundt cake, bake 45-50 minutes; for round pans, bake 30 minutes.
Note: my mother- in-law says she always served this warm with ice cream or sprinkled with powdered sugar
