Description

An old fashioned, melt-in-your-mouth cake topped with a bubbling topping of brown sugar and toasted marshmallows. Everything you’ll need can be found right in your pantry!

Ingredients

  • FOR THE CAKE:
  • 4 whole Eggs
  • 2 cups Sugar
  • 2 cups Flour
  • 2 teaspoons Baking Powder
  • 2 Tablespoons Butter
  • 1 cup Milk
  • 2 Tablespoons Vanilla
  • FOR THE TOPPING:
  • 1 cup Brown Sugar
  • ½ cups Butter
  • 4 Tablespoons Milk
  • 2 cups Marshmallows, Quartered

Preparation

Beat eggs well. Mix sugar, flour, and baking powder together; add to eggs. Combine 2 tablespoons butter with 1 cup milk and bring to a boil in a small sauce pan. Remove from heat and stir in vanilla. Add liquid slowly to the cake mixture. Pour into a greased 9 x 13″ glass baking dish. Bake at 350F for 30 minutes, or until a toothpick inserted into the middle comes out clean.

BROILED MARSHMALLOW TOPPING:
Cream 1 cup brown sugar and 1/2 cup butter. Blend in the milk and stir in the quartered marshmallows. Spread onto the baked cake. Broil for 2 to 3 minutes. Watch very closely, as marshmallows will burn quickly.

This was a very nice cake – quite yummy! I’m guessing that it’s important to use quartered marshmallows, though – I used mini marshmallows and they didn’t really melt very much. This might also be good if you skipped the marshmallows and topped the cake with fruit and whipped cream. Thanks for the recipe!
