A light ice cream filled with the refreshing flavors of strawberry and ginger!
1. In a medium saucepan, mix together strawberries, honey, ginger, and cinnamon. Bring to a boil over medium heat. Reduce heat to medium-low and simmer for 15-20 minutes or until strawberries soften and sauce thickens. Remove from heat and allow the mixture to cool for 20 minutes. Pour sauce into a freezer safe container and place container in freezer for 45 minutes to cool completely.
2. Remove container from freezer. Stir vanilla and milk into the strawberry sauce. Pour mixture into your ice cream maker and freeze according to manufacturer’s instructions.
3. Serve immediately.
Recipe makes about 1 quart of ice cream.
