Make these in a mold or as balls. Either way, they’re beautiful, delicious, and satisfying.
To prepare the filling:
Beat cream cheese and butter together. Beat in powdered sugar and then the peanut butter.
If using molds:
Heat chocolate in the microwave, stirring every 20 seconds until fully melted. (Tempered chocolate works best aesthetically, but any good chocolate will do.) Put a bit in the bottom of the molds and use your finger to paint it up the sides. Let it set until hardened. Then add a plop of peanut butter filling. Top with chocolate. Bang the mold on the counter several times to remove air pockets and let it set until chocolate has hardened.
If making balls:
Roll filling into balls and place on waxed or parchment paper. Dribble chocolate over the tops and spread to the sides if necessary. Once chocolate has hardened, you can leave them or you can flip them over and dribble chocolate on the underside and then let set until hardened.
