Delicious homemade nutty paddle pops, easy and quick with amazing results.
Have a small pan lined with wax paper ready and a sharp knife standing by.
Open your 1/2 gallon of ice cream and slice 2 1-inch sections from your square of ice cream, transfer to your wax paper covered pan and slice each slab in half. You now have 4 “paddles.”
Insert your popsicle sticks in the bottom of each paddle and place in the freezer to harden up for about 20 minutes.
In a small sauce pan, melt chocolate chips and coconut oil and set aside to cool down to room temperature.
When the paddles are frozen, take them out of the freezer and scoop your cooled chocolate shell over, topping with granola. Place back in the freezer for 3 to 5 minutes for the shell to harden and then devour!
