A homemade version of the famous birthday favorite. Add some sprinkles and you take any white cake to another level. These are melt in your mouth cupcakes with a delicious buttercream and sprinkles to top it all off!
Cupcakes:
Preheat oven to 350 degrees F.
Cream together the butter and sugar until fluffy, about 3 minutes. Add the eggs, one at a time, beating well after each addition. Add vanilla and beat until combined.
Combine flour and baking powder in a bowl. Add half of the dry ingredients into the creamed mixture, mixing until just combined.
Add the milk and once mixed, add remaining dry ingredients.
Fold in assorted sprinkles.
Pour batter into cupcake tins and fill 2/3 of the way full.
Bake for 18-20 minutes.
Let cool and then frost.
Frosting:
Cream butter until completely smooth and creamy.
Slowly add in powdered sugar and once it is all added, increase mixer speed and add vanilla.
Scrape down sides of bowl and beat on medium to high for 2-3 minutes.
If the frosting consistency is too thick, slowly add a LITTLE (1 Tablespoon or less) milk until desired consistency is reached.
Decorate cupcakes with frosting and sprinkles and ENJOY!
