Description

Cake mix from scratch… easy, cheap, and oh so delicious!

Ingredients

  • FOR THE DRY MIX:
  • 2-¾ cups Flour
  • 1-¾ cup Super Fine Sugar
  • 2 teaspoons Baking Powder
  • ¾ teaspoons Salt
  • _____
  • FOR THE ASSEMBLY:
  • ¾ cups Unsalted Butter
  • 5 whole Egg Whites
  • 1 cup Milk
  • 2 teaspoons Vanilla Extract
  • ½ teaspoons Almond Extract

Preparation

The ingredients I have listed are specifically for a white cake. I have separated into wet and dry ingredients. If you want to do this as a chocolate cake (or any flavor really) you can just follow the same guidelines to make your own cake mix!

To make dry mix just sift together all dry ingredients including the sugar and place in an air tight container, you’ll need at least a 5 cup mason jar since the ingredients total about 4 1/2 cups. (I would not recommend storing for longer than three months.)

When ready to make cake:
In bowl cream butter. Add egg whites one at a time until fully incorporated. Add milk, vanilla, and almond extract. Combine.

Slowly add dry ingredients to the wet and mix until just incorporated.

Bake at 325F to 350F for 20-30 minutes. Be sure to check at 25 minutes.

This can fill two 8- or 9-inch rounds or be used as cupcakes.

If you wanted to reduce the amount of wet ingredients needed if giving as a gift, you can hit up Costco when they’ve got their vanilla beans 10/$10 and scrape a bean into the original mix. Then you don’t have to add the extract, and it will look more interesting through the jar, too. Just an idea. Thanks for the clever post!

Yes! I was using egg whites for a white cake… I think you could easily sub in three eggs for a more yellow cake texture and flavor. I would also try some different ratios with the butter and using oil and omit the almond extract. Have fun with it! :)

Hmmm….are you using all egg whites because you want a white cake? If so, would 3 whole eggs be a good substitute for a yellow cake or other flavor?
