Description

No-bake cookie sandwiches that are made from nuts with a natural pink fruit filling.

Ingredients

  • FOR THE COOKIES:
  • 1 cup Nuts (any Nut Will Work, We Used Brazil Nuts)
  • ¼ cups Cocoa Powder
  • 2 teaspoons Vanilla Extract
  • 1 pinch Sea Salt
  • 2 Tablespoons Maple Syrup
  • FOR THE FILLING:
  • 1 whole Banana
  • ½ cups Frozen Raspberries
  • 5 Tablespoons Coconut Oil

Preparation

For the cookies:

Place whole nuts (any type of nut like almond, Brazil, cashew) into a food processor. Pulse until the nuts are crumbly.

Then add in the remaining cookie ingredients (except the syrup) and pulse to combine. Then slowly drizzle in the syrup and continue pulsing. Depending on what type of nut you use, each type of nut has a different amount of oil in it. The cookie batter should come together easily without being too wet.

Roll out the cookie batter on a cutting board and find your heart shaped cookie cutter and begin to cut out the heart cookies. Batter will be a little more delicate than traditional baked cookies. Just take your time and have fun!

You should get about 12 heart shape cookies, although it will depend on the size of your cookie cutter. Just make sure you have enough cookies for a top and bottom layer for each sandwich.

Set cookies aside.

For the pink filling:

Place all of the filling ingredients into a blender. Blend until it’s creamy. Pour filling onto a cutting board or sheet pan (one that will fit in your freezer) and place in the freezer to get hard.

For assembly of the cookie sandwiches:

Once filling is set and hard, remove it from the freezer. Use the same heart shape cookie cutter that you used for the cookies and cut the filling.

Place one heart cookie down on a plate. Next top with a pink heart filling. Then place your top heart cookie on top. Repeat until all of your cookie sandwiches are made.
