Description

Healthy Chocolate Chip Oatmeal Bars are a perfect on-the-go breakfast, snack, or dessert! Super easy and comes together in just 30 minutes.

Ingredients

  • 1  Banana, Mashed
  • 1  Egg
  • 1 teaspoon Vanilla
  • 3 Tablespoons Maple Syrup
  • ⅓ cups Creamy Peanut Butter
  • ½ cups Nut Milk
  • 1 cup Rolled Oatmeal
  • 1-½ cup Oat Flour (you Can Make Your Own By Blending Rolled Oats)
  • 1 teaspoon Baking Powder
  • Pinch Of Salt
  • ½ cups Chocolate Chips, Plus More For Topping If Desired

Preparation

Preheat oven to 350ºF and line a 9×9 pan with parchment paper (or spray with nonstick spray). Set aside.

In a medium size bowl, whisk banana, egg, vanilla, maple syrup, peanut butter, and nut milk until smooth.

In a large bowl, combine oatmeal, oat flour, baking powder, and salt. Pour wet ingredients into the dry and mix until combined. Stir in chocolate chips.

Pour batter into baking pan. Sprinkle with additional chocolate chips (optional) and bake for 20–25 minutes or until an inserted toothpick comes out clean. Let cool, slice, and enjoy!
