Description

The women in my family are coconut people. We’re also pineapple people. And cake people. We also like things that are bad for you and are easy to prepare! This simply delicious cake combines all of our favorite things in one dessert. Next time you catch yourself longing for a tropical getaway, whip up this cake and pretend you’re far away from dirty dishes, bills, and all of the other fun entrapments of everyday life.

Ingredients

  • 1 box Yellow Cake Mix, Prepared (18.25 Oz)
  • Additional Required Ingredients Specified In Mix Package (typically Water, Eggs And Oil)
  • 1 box Vanilla Instant Pudding (3.4 Oz)
  • 2 cups Milk, Or The Amount Needed For The Pudding
  • 1 can Crushed Pineapple (16 Oz)
  • 1 cup Shredded Coconut
  • 1 tub Cool Whip (8 Oz)
  • ½ cups Chopped Pecans (or Walnuts)
  • Additional Shredded Coconut For Optional Garnish

Preparation

Prepare yellow cake mix in a 9×13″ pan according to instructions on box (you’ll typically need water, eggs, and oil, as directed in mix package). Prepare vanilla instant pudding according to instructions on box, using the milk. Refrigerate pudding until needed.

Once cake has cooled, poke holes all over cake with the handle-end of a wooden spoon. (Big holes in cake equals big flavor in cake!) Pour crushed pineapple with juice over cake and spread evenly. Add coconut to the pudding and mix well. Spread pudding mixture evenly over the entire cake. Spread Cool Whip evenly over the pudding mixture. Top with chopped nuts. Sprinkle additional coconut over the top if your heart so desires.

Watch “Elvis Aloha From Hawaii” and devour cake in memory of The King. (Young, hot, army, black leather Elvis, not old, puffy Elvis. However, you’ll FEEL like old, puffy Elvis if you eat the entire cake by yourself.)

Refrigerate any leftovers.
