I use the Pioneer Woman’s Perfect Pie Crust to compliment this unusual pie. You’ll be surprised at the flavor. Green tomatoes never tasted better and it actually doesn’t taste anything like a green tomato.
To peel tomatoes easily, immerse in boiling water (about 3 minutes) until skins will slip off, or peel cold with a sharp knife. Blend together the sugar, cinnamon, nutmeg, salt, flour, and lemon juice. Throw in the tomatoes and toss to coat. Pour into the unbaked pie crust, dot with butter, and cover with the top crust. I smear a little soft butter on the top crust and sprinkle with a little sugar. Bake at 375F for about 60 minutes or until tomatoes are soft and the crust is lightly browned.
