Description

The word “gooey” in the title is no joke. These bars are a mess. But sooo indulgent!

Ingredients

  • FOR THE CRUST:
  • ½ cups Butter, Softened
  • ¼ cups Powdered Sugar
  • 1 cup All-purpose Flour
  • ¼ teaspoons Salt
  • FOR THE FILLING:
  • 1 cup Coarsley Chopped, Roasted, Salted, Mixed Nuts
  • ½ cups Butter, Melted
  • 1 cup White Sugar
  • 1 cup Light Corn Syrup
  • 4 whole Eggs, Lightly Beaten
  • 1 teaspoon Vanilla
  • ½ cups Dark Chocolate Chips

Preparation

For the crust:

Preheat oven to 350ºF.

In the bowl of a mixer, beat together butter and sugar until smooth. Add in flour and salt. Mix until combined into pea-sized pieces.

Turn into a well-greased 8×8 pan and press. Bake for 10 minutes.

For the filling:

Turn oven down to 325ºF.

Sprinkle nuts on top of crust and set aside.

Mix together butter, sugar, syrup, eggs, and vanilla. Pour butter and egg mixture gently and evenly over the nuts. Sprinkle on chocolate chips.

Bake for 60 minutes. (Center will still be slightly jiggly.) Let cool completely before serving.

This recipe was delicious!! One recommendation to the other bakers out there. The recipe says to let cool completely before serving…. I made this 2 hours before serving, and it was ‘good’. But the next day it was 20 times better! I suggest making it in the morning if you eat it at night. For some reason, the more time it sits it just becomes MORE delicious! Thanks for a great recipe! (I also used pecans! Yumm!)

These were WONDERFUL! I didn’t have mixed-nuts, so I substituted pecans – and made Gooey Pecan Pie Bars! I think 60 minutes was a bit too long in my oven, so next time I will decrease by 5-10 minutes and see what happens. It was just a bit TOO dark on top. But, VERY rich and gooey and yummy and AWESOME! Thanks for the recipe! :)
