Light, fluffy, and delicious. This is by far my favorite vanilla cupcake recipe
*Preheat oven to 350 degrees. Line cupcake pan with liners.
*In a large bowl cream together the butter and sugar until light and fluffy, about 3-5 minutes.
*Add the egg yolks, beating well.
*Mix in vanilla.
*In a separate bowl, combine flour, baking powder and salt.
*Add the dry ingredients to creamed mixture, alternating with the milk. Mix well.
*Beat egg whites until stiff peaks form.
*Gently fold egg whites into the batter using a rubber spatula.
*Fill cupcake liners 1/2-3/4 full.
*Bake for 20-25 minutes.

Hands down, the best cupcakes ever. Perfect consistency, perfectly moist, perfectly puffed little tops. Just perfect. I think the secret is the egg whites…

These are delicious. I made them for my husband, and taste-wise, they were some of the best cupcakes I’d ever had. They baked up pretty funky – I need to figure out some adjustments for the altitude here in Colorado. I’m sure if I made them closer to sea level they’d have looked as pretty as they tasted though.
