Made with crushed up Girl Scout© Samoa cookies for that coconutty, chocolaty, crunch. A layer of caramel and then more chocolate with a sprinkling of chocolate chips. Another untraditional use for those Girl Scout© cookies you are buying up this season.
1. Preheat oven to 375 F. Crush the Samoas into small pieces (I put them onto a cookie sheet and used a mallet to crush them). Place Samoa pieces at the bottom of a foil lined 9×11 baking sheet (use one with a rim).
2. In a saucepan over medium heat, melt butter and brown sugar. Bring to a boil and stir for 3 minutes. Pour over the top of the cookie pieces.
3. Put the tray into the preheated oven and bake for 8 minutes. The brown sugar mixture will caramelize and bubble. When done, remove from oven and sprinkle the top evenly with chocolate chips. Place in the refrigerator or freezer to harden.
4. Once hard, break or cut into individual pieces.
