Gingerbread cupcakes, moist and spicy for the holidays!
Preheat oven to 350ºF.
In a large bowl, whisk together the soy milk, oil, honey, sugar, and vanilla extract. Add in the flour, baking powder, baking soda, and spices. Whisk until combined.
Pour the batter into lined cupcake tins. Bake at 350ºF for 20-22 minutes, or until a tester comes out clean from the center of the cupcakes.
Let cool before frosting.
