My mom and aunt have been dipping homemade chocolates for decades. This is their recipe for their Coconut Almond Centers.
Combine salt, Karo, sugar, water, and coconut milk. Cook to soft ball stage, about 230ºF. Remove from heat; add flour and shredded coconut. Mold into balls with one whole almond in the center of each. Let cool on wax paper.
You can also use this as the filling of a chocolate layer cake, or you can dip them in chocolate for an Almond Joy-like experience.
