Delicious Funfetti Blondies, made bite sized, covered in white chocolate and sprinkles. A sweet-tooth’s dream!
Preheat oven to 350 degrees F.
In a medium bowl, combine butter and brown sugar and mix until well combined. Add in the egg and vanilla; mix to incorporate. Mix in the flour, salt, powdered sugar and baking powder. Stir until everything comes together. Lastly, add the 1/2 cup of sprinkles. Stir.
Spray an 8X8 dish with Baker’s Joy or non-stick spray. Cook for 28-30 minutes, or until a toothpick comes out clean. Let cool COMPLETELY on a cooling rack (I cooled them overnight).
Next, cut off the darker, crispy edges around the sides of the pan. Set them aside for your snacking enjoyment. Cut the remaining cookie into 6 strips, then cut those strips into 6 squares. You should have 36 squares when you finish cutting.
Place squares on a parchment paper covered baking sheet, and into the fridge to get slightly chilled.
Melt chocolate in the microwave (do this for 30 seconds at a time, stirring in between each 30 second interval, and stopping as soon as it’s melted) or by using a double-boiler; be careful not to burn it.
Dip one blondie bite at a time into the melted white chocolate. Use a spoon to help you cover it if needed. Cover with chocolate and place back on the parchment covered baking sheet. Decorate with sprinkles. Repeat with remaining blondie bites. Place pan in fridge so the chocolate will set.
This makes 36 i-inch squares.
