Description

Sweet, ripe blackberries are a summer favorite here in the beautiful Pacific Northwest. This delicious cobbler topped with a cinnamon biscuit dough is a wonderful family favorite. Serve warm with your favorite vanilla ice cream and savor the summer!

Ingredients

  • 1 cup All-purpose Flour
  • 1 cup White Sugar, Divided
  • 1 teaspoon Baking Powder
  • ½ teaspoons Salt
  • 6 Tablespoons Cold Butter
  • ¼ cups Boiling Water
  • 2 Tablespoons Cornstarch
  • ¼ cups Cold Water
  • 1 Tablespoon Lemon Juice
  • 4 cups Fresh Blackberries, Rinsed And Drained

Preparation

Preheat oven to 400ºF.

In a large bowl, mix the flour, 1/2 cup sugar, baking powder, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in the boiling water just until mixture is evenly moist.

In a separate bowl, dissolve the cornstarch in cold water. Mix in remaining 1/2 cup sugar, lemon juice, and blackberries. Transfer to a skillet, and bring to a boil, stirring frequently. Transfer to an 8×8″ baking dish and drop dough onto the top of berry mixture by spoonfuls.

Bake 25 minutes in the preheated oven, until dough is golden brown.

This was very good, although I thought the blackberries needed more sugar.

This was fantastic! Not too sweet and a perfect pairing! I put fresh squeezed lemon juice and the zest of my lemon, which was great!However, in the description, the author calls this cinnamon biscuit dough, but I did not see where the addition of cinnamon was called for. Either way, I loved the recipe as it was made and will make again.

This is a great recipe. Great flavor and easy to make! Top it off with a little whipping cream and you can’t go wrong.
