This is my Caribbean version of a Spanish favorite, “Vanilla Flan.” I just did this recipe inspired by Ree’s Pumpkin Flan. This one with mango is more Caribbean—we don’t eat much pumpkin at the island. But mangoes? Uhmm … everyday! Hope you like it as much as we did!
Mix all the ingredients in blender (for the exception of the ones for the caramel). On a separate pan, melt sugar, water, syrup and lemon, until brown. Add caramel to the mold and wait until it cools.
Add the mix to the mold. Bake at 375 degrees on a “Bano de Maria.” Serve cool with whipped cream and mango slices on top to garnish.

I love mango in everything, and will be sure to try this recipe. See my mango buttercream icing. It is to die for!
