This is the easiest ever to make. It can be whipped up in a few minutes and be ready to eat in an hour. So rich and delicious for so little effort.
Crush the biscuits/cookies and mix with the demerara sugar and melted butter. Spoon into an 8-inch cake tin, lined with baking parchment. Press down firmly and chill in the fridge.
Meanwhile, beat together the cream cheese, icing sugar and vanilla with a spoon until mixed. Fold in the cream, mixing well. Spoon the mix over the base and smooth the top.
Chill in the fridge for at least 1 hour until set.
Note: You can add fruit and other flavours to the mixture. I served it with grated chocolate and some strawberry puree.
