Very easy, very moist orange cake (or use lemons to make it a lemon cake!)
(One orange is for the cake, and one is for the icing.)
This is so easy because you can make it in your blender.
Preheat oven to 180C/350F. Spray a large loaf tin with non-stick cooking spray or brush with some melted butter.
Chop one orange – yes, skin and all – into chunks and place into your blender jug with the melted butter, the eggs, and the sugar. Blend on high until well combined. Pour this into a large bowl with the flour and stir with a wooden spoon until combined.
Pour the batter into the prepared loaf tin and bake in the oven for 50 minutes. Allow to cool for five minutes in the tin, then turn out onto a wire rack to cool completely.
Icing:
Using a fine grater or zester, remove the zest from the second orange. Combine the icing sugar and the extra 40g of butter in a bowl and add enough freshly squeezed juice to achieve the desired consistency. You can add the zest to the icing, or sprinkle it on top after you’ve iced the cake. Whatever you prefer.
Note: I tried this with a lemon instead of an orange and it was delicious.

I made this today – it is SOOOO easy – washing the blender takes longer than making it. I only had one egg, not to be deterred I added a big dollop of Greek style yoghurt and a splosh of olive oil to the batter. Delightful orange flavour and moist. I will definitely be making this again.

Aaawww… reminds me of my Dad (God rest his sweet soul). Orange cake was his favorite kind of cake Looks yum!

This is my favourite recipe too. It is so easy and it very orangey which is just how we like it.
