A simple recipe that truly tastes like fresh lemon without any cornstarch or dairy.
Combine all ingredients in a medium saucepan. Whisk on medium-low heat for approximately 10-15 minutes until mixture thickens. (You want to be able to scrape a spatula across the bottom of the saucepan and see a line, then the mixture should quickly fill back in. You do not want the mixture to get too thick and stiff.)
Strain the mixture and enjoy!

Can this be made ahead of time and stored in the fridge a couple days? Or best used right away?
