Gooey Butter Cakes are big around St. Louis and this one combines my 2 favorite flavors! Easy to make and even though it’s not the prettiest cake I’ve ever seen, it is definitely the richest! This was a big hit in my house!
To make the crust:
Combine the cake mix, 1 egg, and 8 tablespoons melted butter. Press this mixture into the bottom (and slightly up the sides) of a 9×13 cake pan.
To make the filling:
In a stand mixer (or using a hand mixer) combine the cream cheese and peanut butter until well mixed. Add 2 eggs and mix until combined. Next add 8 tablespoons of melted butter and vanilla and mix until combined. Last, add the box of powdered sugar and mix until thoroughly combined.
Pour the filling on top of the crust and bake at 350 degrees for 40-50 minutes.
You want the center to be a little gooey, so don’t overbake it.
Let cool to room temperature and serve!

This is currently in the oven! I pulled myself away from licking out the batter… I’ll post a review soon, but I am pretty sure it’s going to be awesome already :o)
