Description

I love this recipe because you can dump it all in a bowl and mix! A moist banana cake with a rich cinnamon frosting!

Ingredients

  • FOR THE CUPCAKES:
  • 1 cup Sugar
  • 1 cup Ripe Bananas, Mashed
  • ⅓ cups Vegetable Oil
  • 2 whole Eggs
  • 1 teaspoon Vanilla
  • 1 cup Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Cinnamon
  • ¼ teaspoons Salt

  • FOR THE FROSTING:
  • 5 Tablespoons Flour
  • 1 cup Milk
  • 1 cup Butter
  • 1 cup Granulated Sugar
  • 1 teaspoon Vanilla
  • 1 teaspoon Cinnamon, Plus More For Sprinkling On Top Of Cupcakes

Preparation

For the cupcakes:
Combine sugar, bananas, oil, eggs and vanilla in a large bowl. Stir together well. Next add rest of ingredients to bowl. Use a hand mixer to beat for 2 or 3 minutes. Fill lined cupcake pan with batter. Bake at 350 degrees F for about 10-12 minutes or until cupcakes are done. Don’t overbake or they will be dry! Let cupcakes cool completely before frosting.

For frosting:
The frosting is an adaptation of the ” That’s the best frosting I’ve ever tasted” by MissyDew on TK.

Put flour and milk in a saucepan on low to medium heat and whisk constantly until mixture thickens. I found you want it to be thick, like really thick pudding. Remove from heat and set aside to cool completely. It’s a good idea to cover with plastic wrap so it doesn’t get a skin. I usually wait until the mixture is cool before I start the final step, as follows. Place butter and sugar into a large bowl (I recommend a stand mixer). Beat for several minutes until it’s fluffy. Then add flour mixture, vanilla and cinnamon. Beat until sugar is dissolved and frosting is not gritty. This takes several minutes. I usually do a taste test and beat until it is creamy. Frost cupcakes and sprinkle with cinnamon.

I had a bit more frosting than I needed for the cupcakes. It would be great for spreading on toast or a bagel!

The first time I made these cupcakes was May 18, 2011. As of today, May 31, 2011, I’ve made these cupcakes four times… and two of those times were double batches!
Yes, they are that good!!! =)

Holy moly these are soooooo good. My kiddos loved helping make them. This is the BEST frosting I’ve ever made. So light and dreamy.

Made them tonight! WONDERFUL!!! The frosting is so creamy and works amazingly well with the banana cupcake!

I would probably not use the word easy in the name and set the difficulty at medium. The consistancy of the milk and flour over heat gets tricky…
…or maybe it was just me! =/ Ha ha…
…it took me two tries to get the milk and flour decent and it was still too runny.

Oh…but that frosting is to die for and worth making twice!!!
