My love for cheesecakes and jam making has led me to create this simple but delicious cheesecake using my own homemade jam and freshly picked fruits from the garden.
1) Preheat oven to 350 degrees.
2) In a large bowl, beat cream cheese and sugar until smooth. Add in eggs, 1 at a time, mix well. Scrape sides of bowl often. Add vanilla.
3) This next step is totally up to you: you could mix the jam and the crushed berries in with all the cream cheese mix or you could pour 1/2 of the plain mix in the crust and mix the other 1/2 with jam and crushed berries. Pour into crust.
4) Bake for 25-35 minutes or until set. Cool and refrigerate for at least 4 hrs before serving. Serve with more jam or more fresh berries.
