This is one of the first cakes that I can remember baking with my grandmother. I think it’s similar to what most folks call a “Hummingbird Cake.” It’s chock full of bananas, pineapple, and pecans, with a simple cream cheese frosting.
Do not use a mixer.
Preheat oven to 350 degrees. Sift all dry ingredients into a large bowl. Add diced bananas, oil, vanilla, eggs, crushed pineapple (juice and all), and pecans. Mix until just combined; do not beat. Pour batter into a greased and floured tube pan. Bake for 1 hour and 20 minutes, or until a toothpick inserted in the center comes out clean. Set aside to cool.
For the frosting, beat cream cheese. Add melted butter and confectioner’s sugar. Beat until light and fluffy. Frost only the top of the completely cooled cake. Enjoy!

A doctor bird is a hummingbird. It’s the national bird of Jamaica. Just a little FYI! Cake sounds yummy!

Love this recipe! I couldn’t resist picking off the top of the cake as it cooled. I gave tiny pick off pieces to my family and we were lucky we still had intact cake at dinner time! Will definately make it again!
