Description

Today I made some of this crunchy goodness for the first time. It actually wasn’t too difficult. Time consuming, but worth it. I do wish my Dad was here so I could give him some of this homemade peanut brittle. I think he would be pretty impressed that I made it from scratch.

Ingredients

  • 1 cup White Sugar
  • ½ cups Light Corn Syrup
  • ¼ teaspoons Salt
  • ¼ cups Water
  • 1 cup Peanuts
  • 2 Tablespoons Butter, Softened
  • 1 teaspoon Baking Soda

Preparation

1. Generously grease a large rimmed cookie sheet and set aside.
2. In a large saucepan (with candy thermometer clipped to the side), over medium heat, bring to a boil the sugar, corn syrup, salt and water. Stir until sugar is dissolved. Stir in peanuts. Stir frequently until temperature reaches 300 F (150 C) on your candy thermometer, or until a small amount of mixture dropped into a cup of very cold water separates into hard and brittle threads. (I did this second method)
3. Remove from heat. Immediately stir in butter and baking soda, pour at once onto the cookie sheet and smooth it out quickly. Let cool. Break candy into pieces.
