These truffles are creamy, luscious, and are sure to melt in your mouth. Plus, the creme de menthe liquor gives them a nice grownup kick!
1. Bring a small saucepan with water to a boil. In a glass mixing bowl, add chocolate chips and heavy cream. Set bowl on top of saucepan to create a double boiler. Melt over low-heat and stir until chocolate is melted and smooth, about 4-6 minutes.
2. Add creme de menthe and stir until combined. Refrigerate for 2 hours.
3. Pour cocoa powder into a small bowl. Then, use a small scoop to portion truffle mixture into 1/2 inch balls and roll in the palm of your hand to shape. Roll truffles in cocoa powder until evenly coated.
