Description

A lightly sweet pudding that marries the nuttiness of quinoa with fruity, intensely sweet prunes.

Ingredients

  • 1 cup Water
  • ½ cups Quinoa
  • 1 cup Milk
  • ¼ teaspoons Cinnamon (plus More For Garnish)
  • 1 dash Nutmeg
  • ½ teaspoons Vanilla
  • 1 Tablespoon Sugar
  • 1 teaspoon Cornstarch
  • ¼ cups Prunes

Preparation

In a small pot combine the water and quinoa. Bring to a boil and cook until all of the water has totally disappeared, about 15 minutes.

Add the milk, spices, vanilla, sugar, and corn starch to the quinoa. Bring to a boil and then reduce heat. Simmer for 5 to 7 minutes, until the excess milk has evaporated, leaving the quinoa suspended in a creamy pudding. Remove from heat.

Chop the prunes into small pieces and stir them into the pudding. Serve warm, sprinkled with cinnamon.
