Description

Copycat Cosmic Brownies topped with a chocolate ganache and rainbow sprinkles! Super chocolatey, rich and chewy! Just like your childhood favorite!

Ingredients

  • FOR THE BROWNIES:
  • 10 Tablespoons Unsalted Butter
  • 1 cup Granulated Sugar
  • ½ cups Light Brown Sugar
  • ¾ cups Unsweetened Cocoa Powder
  • 1 teaspoon Vanilla
  • 2 whole Eggs
  • 1 whole Egg Yolk
  • ⅔ cups All-purpose Flour
  • ¼ teaspoons Salt
  • FOR THE GANACHE:
  • 1-½ cup Semi-Sweet Chocolate Chips
  • ½ cups Heavy Cream
  • Rainbow Sprinkles, For Garnish

Preparation

For the brownies:
Preheat oven to 350ºF. Line a 9 x 9 or 8 x 8 pan with aluminum foil. Lightly spray with cooking spray or grease with butter. Set aside.

Melt butter in a microwave safe bowl until melted (about 1 minute). Allow butter to cool slightly. Stir in both sugars, cocoa, vanilla, egg, and egg yolk until combined. Fold in flour and salt.

Pour batter into the prepared pan and bake for 25 minutes. Cool completely.

For the ganache:
Add chocolate chips and heavy cream to a medium microwave safe bowl. Heat in 15-second intervals until fully melted.

Allow the ganache to cool for about 2–3 minutes. Pour and spread ontop of the cooled brownies. Place back into the fridge to allow the ganache to set.

Serve with rainbow sprinkles on top!
