Description

A delicious way to change up strawberry shortcake. This cookie is a thick, yummy sugar cookie base to place your favorite berries over! I nearly always double the recipe because one is never enough for my family!

Ingredients

  • ½ cups Butter Flavored Shortening
  • 1 cup Sugar
  • 2 whole Eggs
  • 2 cups Flour
  • 1 teaspoon Cream Of Tartar
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • Strawberries
  • Whipped Cream

Preparation

Preheat the oven to 400 degrees F.

Cream the shortening and sugar together. Mix in the eggs. Then mix in the flour, cream of tartar, baking soda, and salt.

Place in a greased 9 inch pie or cake pan. Cook at 400 for approximately 20 minutes or until golden brown.

Serve with your favorite berries and/or whipped cream.

When doubling I use two pie plates/cake pans.

I’ve never been a huge fan of the shortcake part of Strawberry Shortcake and using a sugar cookie type base sure sounds like a great idea! Now I just need some strawberries.

What size pan do you use when you double the recipe or do you just use 2 pie or cake pans?
