A tea bread that’s not too sweet – and easy to boot!
Preheat oven to 350F.
In small bowl, combine flour, shredded coconut, baking powder and salt.
In large bowl, cream butter and 3/4 cup sugar on medium until pale and fluffy.
Add beaten eggs and lime zest, and beat until combined.
Add flour mix and coconut milk, alternating on low, until all is incorporated. Scrape down the bowl with each addition.
Add one tablespoon of lime juice to the mixed batter and beat to incorporate.
Pour into greased loaf pan and bake for 45 minutes, or until a cake tester inserted into the cake comes out clean.
Cool, then turn out onto a serving plate. Mix lime juice and remaining 1/4 cup sugar, and pour over cake to form glaze.
Try to stop yourself from eating the whole thing in one sitting. By yourself.
