Rich and fudge-y bite-sized chocolate that melts in your mouth. Chocolate truffles are also a symbol of good luck to ring in the New Year!
First sift together the cocoa powder and powdered sugar into a medium sized bowl, then set aside.
Melt together the chocolate and heavy cream in the top of a double broiler (with simmering water in the bottom). Once the chocolate is melted, remove the bowl from the heat and stir in the vanilla. Cover the bowl with a sheet of plastic wrap and refrigerate overnight (or at least one hour).
Once cooled, scoop and shape the chocolate mixture into one inch balls (I used a melon baller to make them even.) Roll them in the cocoa and powdered sugar mixture until coated and serve! Enjoy!
