Description

A Cozy Kitchen makes Chocolate Popcorn with Sea Salt. Perfect for snacking on during the holiday season or wrapping up as a gift for friends and family.

Ingredients

  • 1 Tablespoon Vegetable Oil Or Grapeseed Oil
  • ½ pounds Kernels Of Popcorn
  • 2 Tablespoons Unsalted Butter
  • 12 ounces, weight Chocolate Chips Of Your Choice (I Used Semi-sweet)
  • 1 Tablespoon Milk Or Cream (I Used A Splash)
  • Sea Salt Or Kosher Salt, For Sprinkling

Preparation

In a medium saucepan, pour the tablespoon of oil and heat over medium heat. When oil is hot, throw in popcorn. Make sure all of the kernels are touching the bottom of the pan. Cover the pan and wait until you hear kernels start to pop. Once they start, grab the pan with one hand and grab an oven mitt or towel and hold down the lid. Pick up the pan and start to shake until all is quiet for a few moments. Return pan to the stove and repeat a few times. It takes some coordination, but it’s way easy and this way you won’t have any unpopped kernels and the popcorn won’t be burnt.

When the popcorn is done, turn off the heat and set aside. In a double boiler, or just a glass mixing bowl over boiling water, throw in the butter, chocolate chips and splash of milk or cream. Stir until melted.

Pour the popcorn in a mixing bowl and add the melted chocolate. Grab a wooden spoon and gently stir in the chocolate, ensuring that all of it is covered in chocolate. Then spread the chocolate popcorn out on a baking sheet or baking mat and sprinkle liberally with sea salt or kosher salt.

Let it sit for 3-4 hours or until dry and then put in an airtight container until ready to serve.

Grrrrr, I was so looking forward to making this at x-mas but didn’t have time. So I’m making them right now for NY’s Eve and i’ve ruined two bags of chips. What the heck did I do wrong?

Oh I might disagree with you. I had a gigantic bowl for dinner. But I’m weird…so you might be right!

This was yummy! I used a cup of unpopped kernels (I did not measure by weight) and it made way more than 4 servings, I think 8-10 servings is more accurate. It is so rich you really can’t eat more than a handful or two.

I made this over the weekend and the only issue I had was trying to get the chocolate to melt. We used Trader Joe’s brand semi-sweet chocolate chips. After at least 20 minutes, googling, and switching bowls for the double-boiler (in case that was the issue), my husband tried adding more butter to see if it would help the chocolate. It worked! We ended up having to add a total of 5 tablespoons to the chocolate. The finished product was very good.
