Preheat the oven to 350 F and spray an 8″ square pan with cooking spray, making sure you coat it very well. Set aside.
In a medium bowl, combine the cake mix, egg, water and oil. Beat with an electric mixer for 1 minute. Pour into the pan, and bake for 10 minutes, or until a toothpick inserted in the center comes out clean.
Remove cake from oven and set dish on a rack. Let cake cool completely. Once the cake cools completely, slice it into bite-sized squares.
In a small bowl, melt the chocolate chips and coconut oil (or butter) in the microwave in 15-second intervals, stirring between each. It should only take 2-3 intervals.
In a separate bowl, stir together the marmalade and Grand Marnier.
To assemble: Press two squares of cake together with some jam in between (see above photo for reference). Let the assembled cakes set for a few minutes. Then dunk them in the melted chocolate mixture, making sure to coat all sides of the cake bite. Set them on a parchment lined plate.
Let the chocolate frosting harden onto the cake bites in the fridge for 30 minutes. Do not store them in the fridge longer than that, because cold dries out desserts that are made using cake mix.
