Chocolate cupcakes frosted with dulce de leche buttercream frosting.
For the cupcakes :
Preheat the oven to 375 F. Put 6 paper liners into a cupcake pan. Set aside.
Into your mixing bowl add the butter, flour, baking powder, cocoa, sugar and salt. Mix with the paddle attachment until the mixture resembles fine breadcrumbs.
In a small bowl mix the chia seeds with the water and let it sit for a few minutes. Shortly, it will become a gel. Add the gel to the dry ingredients and mix. Slowly add the milk.
Spoon the batter into the prepared baking cups. Bake for about 18-20 minutes. Remove from the oven and set aside to cool.
Dulce de Leche Frosting
Put the butter, sugar and dulce de leche into a mixing bowl. With the paddle attachment, mix them on low speed until incorporated. Increase the speed and mix for further 2-3 minutes. Add few drops of milk if needed until you reach your desired frosting consistency.
Frost the cupcakes when completely cooled!
