Description

These Chocolate Chip Sweet Potato Bars are packed with oatmeal, sweet potato, walnuts, pumpkin seeds, and chocolate chips.

Ingredients

  • 2 cups Rolled Oatmeal
  • ⅓ cups Chopped Walnuts
  • ⅓ cups Pumpkin Seeds
  • 2 Tablespoons Ground Chia Seeds Or Flaxseed
  • 2 teaspoons Cinnamon
  • Pinch Of Salt
  • ½ cups Almond Butter
  • ½ cups Coconut Butter
  • 1 cup Baked Or Steamed Sweet Potato
  • ¼ cups Maple Syrup
  • ½ cups Chocolate Chips, Plus More For Sprinkling

Preparation

Combine oatmeal, walnuts, pumpkin seeds, ground chia, cinnamon, and salt in a bowl.

In a food processor (or blender), blend almond butter, coconut butter, sweet potato, and maple syrup until smooth. Combine liquid sweet potato mixture with oat mixture, and then fold in chocolate chips.

Scoop mixture onto an 8×8 pan lined with parchment. Sprinkle on extra chocolate chips and bake at 400ºF for 12 minutes. Let cool and enjoy!
